Meal Plan Sept 26

This is going to be a BUSY week so I planned 5 slow cooker recipes. I own two slow cookers – one small, one big, and they both get used a couple of times a week. I love slow cookers!

* Monday – Slow Cooker Sloppy Joes
Grass fed beef, whole foods ingredients, and the addition of two cups of lentils to the recipe healthy these up and stretch the protein value. See recipe: Grass Fed Sloppy Joes

* Tuesday – Slow Cooker Chipotle Beef Tacos
Today I’m hosting our homeschool group’s field trip and everyone is coming over for lunch! So the night before I’m starting a huge roast (with chipotle peppers in adobo sauce) in the slow cooker, cooking it all night and shredding it in the morning for tacos with all the fixin’s: avocado, salsa, cheese, olives.

Hope we have some left over for dinner ;)

* Meatless Wednesday – Slow Cooker Lentil Stew
The lentils I cooked Monday will go into a lentil/vegetable stew: potatoes, carrots, onions, celery, chicken broth and seasonings. Maybe a little leftover meat if I can find some.

*Thursday – Slow Cooker Apricot Chicken
(Chicken thighs cooked all day with dried apricots – yes ma’am!)
Side: Rice and broccoli

*Friday – Slow Cooker Corn Chowder with Shrimp
I’m having a yard sale today. Groan…. I’ll be exhausted by the end of the day, but I can look forward to this amazing corn chowder recipe for dinner. :-)
