In a few days we’re leaving for Tybee Island!
My mom and I made a menu together of simple, fun and yummy dishes to cook while we’re there.
I don’t want any food in the fridge to go to waste, so dinner is going to be a bit of a hodge podge of leftovers for the next 3 days.
This is our Menu Plan for July 13-19:
* Salmon with lemon butter sauce
(Side: Corn on the cob, broccoli)
* Black Bean and Sausage Soup
(Side: Italian bread)
* Black Bean and Mango Salad
Tybee!!!
* Spaghetti with Meatballs
(Side: garlic bread, mixed salad with feta cheese and blueberries)
* “Men Cook” Day
My Dad will make breakfast, his specialty. Zeke will grill out steaks, and Caleb is making a Key Lime Pie.
* Pick a Salad Bar: Tuna salad, pasta salad, chicken salad
What are you eating this week?
We are visiting family in Minnesota this week, and I was so utterly pleasantly surprised when my mom told me she had organic chicken on hand! She also only buys free-range eggs from the farmer’s market during the summer, and they are AWESOME!
We’ll be eating more vegetarian with my sister and Indian BIL this wkend, but at least it will be organic whole foods (I’m taking some Organic Valley raw cheese so we can get some animal product in daily).
