Menu Plan 6-29

This is our menu plan for the week starting Wednesday, June 29th.

* Unstuffed Green Peppers
(Side: Green salad)

I love stuffed green peppers but hate how much work they are. I was excited to find this recipe for “Unstuffed Green Pepper Bake“. Not only are they much easier, but the flavor is the same and my kids loved it. Win!

* Baked Potato Bar

A friend of mine told me years ago that to keep things simple and save money, she has “Potato Bar” once a week. I’ve never tried it until now!

For this meal I’ll put a potato for each person (two for hubby), rubbed with olive oil, in the slow cooker and cook on low all day until they’re soft. Then on the table I’ll have toppings for everyone to choose from: shredded cheese, leftover chili from last week’s menu plan, cooked diced bacon, sour cream, butter, green onions, etc. Easy and fun!

* Eat Out: Mexican
Saturday we went to Fernbank Museum here in Atlanta to see the Mythic Creatures exhibit. Everybody was craving chips and salsa so we headed to El Azteca on Ponce de Leon for dinner.  Delicious!

* Grill Night – Salmon Burgers
(Side: Turnip greens, baked beans)

Big Z loves to grill on the weekends so I took a night off and we had grilled salmon “burgers”.

* Fried Chicken
(Side: Rolls, baked beans, turnip greens)

A Southern gal has to have some fried chicken every once in awhile, no?

    Love the potato bar idea for family dinner. I haven’t tried it for dinner yet, but have done it for parties and gatherings. Definitely going to do that soon!
